That's a pretty slick solution, but the wireless remote may be a bit overkill, especially since you'd have to leave the receiver on all the time and run down your battery.
Most doorbells are transformer-powered, and the transformer is in a closet somewhere. The simpler way to handle this would be to install a light switch in the wall next to the transformer, then flip the switch when you want the doorbell to be silent.
If you really want convenience, you could disconnect the transformer from the house wiring (it will be 2 wire nuts), then install an outlet in the j-box that the transformer was covering. Plug in a light timer, then hook the transformer to the timer with a short lamp cord.
